Small in size, but big in flavor, these Taco Stuffed Pepper Bites are the perfect way to enjoy the Big Game next weekend with friends! It’s all about portion control, and using fresh ingredients to achieve the same flavors as a traditional taco – with less calories, or carbs. Score extra points with a side of Avocado Crema, by swapping out sour cream for Greek yogurt. Go Team!
Ingredients:
For the Taco Stuffed Pepper Bites:
- 1 teaspoon cooking oil
- 1 lb. ground beef, or turkey
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 teaspoon red pepper flakes
- 1 lb. mini bell peppers
- 1 cup shredded cheese (your choice)
For the Avocado Crema:
- 1/2 cup plain fat-free Greek yogurt
- 2 ripe avocados, peeled and seeded
- 1 clove garlic, minced
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- Salt and pepper, to taste
Directions:
For the Taco Stuffed Pepper Bites:
- Preheat oven to 350 degrees F. Halve peppers lengthwise; remove ribs and seeds.
- In a medium skillet set to medium-high heat, add oil. Add ground meat and cook for 5-7 minutes, until meat is no longer pink. Stir in dry spices, halfway through cooking. Once done, with a small spoon, scoop meat mixture evenly into each pepper. Place on baking sheet. Bake peppers for 13-15 minutes, or until peppers have softened slightly.
- Remove peppers from oven and top with cheese. Return to the oven for 1-2 minutes, until cheese is melted. Top with Avocado Crema, if desired (recipe below).
For the Avocado Crema:
- Mix all ingredients in a blender or food processor. Mix until smooth. Season with salt and pepper, to taste. Chill for at least 30 minutes, to allow flavors to come together.
